Method

This recipe uses an easy, foolproof method that requires only a few minutes of active time.

  1. Measure the ingredients by weight and mix together
  2. Roll out the dough and cut
  3. Bake

To make these crackers, start by mixing all the ingredients together in a bowl. This includes flours, salt, seeds, oil, honey and water. Once the ingredients are well combined, roll out the dough thinly on a floured surface. Use a rolling pin to ensure the dough is evenly spread out. Next, use a pizza cutter or cookie cutters to cut the dough into individual cracker shapes. Place the crackers on a baking sheet lined with parchment paper and bake in a preheated oven until they are crispy and golden brown. Instructions

  • Preheat the oven to 300° F. Line a baking sheet with parchment paper. 
  • Use a kitchen scale to measure the ingredients. Using a spice grinder, grind the flax seeds to a powder. Add the sunflower and pumpkin seeds and grind them into a seed flour, but stop before it becomes a paste.
  • Place a large mixing bowl on the kitchen scale. Add the seed flour. Measure in the rest of the dry ingredients, zeroing the scale after each ingredient. Stir the dry ingredients to mix. Measure in the honey, oil and water. Stir to thoroughly mix. This will take about two minutes. It will form a firm ball.
  • Put the dough on a hard surface and knead it to make it hold together. It should be tacky, but not sticky. Add a little flour if it seems too sticky. Cut the dough in half.
  • Flour the surface. Using a rolling pin, roll out the dough until it is very thin, about ⅛ inch. Add flour as needed to keep it from sticking.
  • Mix the egg white with an equal amount of water. Paint the dough with the egg wash and sprinkle the dough with seeds, pressing them into the dough slightly.
  • Use a pizza cutter or a cookie cutters to cut the dough into your preferred cracker size and shape.
  • Carefully transfer the crackers to the prepared baking sheet.  
  • Bake for 15 to 30 minutes, depending on how crisp you like them. They should be golden brown and crisp. Remove from the oven and leave the crackers on the baking sheet for 10 minutes as they cool, which will make them crispier. They should snap when cool.
  • When completely cool, store the crackers in an airtight container to keep them crisp. They can also be put back in the oven for a minute, or an air fryer if the lose some of their crispness.
