With a background in agriculture and years spent working closely with farmers, crops, and food production, I’ve learned that the best meals start with great ingredients. The Master Pantry plan is a practical, science-based, plan, showing respect for the people who grow our food.

- HORIZON ORGANICS – Milk, Cream and Butter that are not only organic and produced sustainably, but 60 percent of their producers are already using regenerative agriculture methods, which actually reduces the amount of carbon in the atmosphere. The more we buy products that are produced this way, the more farmers will produce them.
- KERNZA – Kernza flour is its warm, nutty, toasted flavor. It tastes like a cross between whole wheat, toasted barley, oats and a hint of graham. It’s flavorful enough to stand out but gentle enough to blend beautifully with other flours. However, it is a whole wheat, so we use it in waffles and hearty breads but usually mix it with King Arthur Bread Flour or All Purpose Flour.
- KING ARTHUR FLOUR – King Arthur is an employee-owned company that responsibly sources the wheat for their flours, and it pays off in the taste and quality. They have a “never bleached” guarantee, which means their flours don’t have an off taste or unpredictable results that can be caused by bleaching. They also carefully calibrate the protein content, which means the flour gives you the same results, every time you bake. Plus, this is a certified B Corporation that is supporting sustainable agriculture.
- KING Arthur organic all-purpose flour – 11.7 percent protein – for baking sweet breads like cinnamon rolls or sandwich breads.
- King Arthur Whole Wheat Regeneratively-Grown Climate Blend Flour – whole wheat blend.
- King Arthur organic bread flour – 12.7 percent protein – for baking heartier breads.
- King Arthur unbleached cake flour – 7.0 percent protein – for baking cakes.
- King Arthur gluten-free measure for measure 1:1 – for gluten free baking that doesn’t use yeast.
- WHOLESOME REGENERATIVE ORGANIC CERTIFIED CANE SUGAR – produced from organic sugar cane fields that are green cut and are not burned or treated with herbicides or synthetic fertilizers. Burning sugar cane fields contributes to air pollution and climate change. It is also a major cause of the destruction of the rain forest. Buying sugar from fields that are green cut helps prevent this destruction. We make our own brown sugar by adding sorghum syrup, and superfine sugar by putting it in a food processor for a two minutes.
- DIAMOND CRYSTAL KOSHER SALT – Salt not only varies greatly in taste and texture, but it measures differently depending on the size and structure of the crystal. It’s very important to use the same brand as the original recipe to achieve the same results.
- SAF RED LABEL INSTANT YEAST and SAF GOLD LABEL INSTANT YEAST – I don’t know why. We just have much better results with this yeast.
- LA TOURANGELLE ORGANIC REGENERATIVE SUNFLOWER OIL – Expeller pressed, this is a healthy substitute for butter. This high quality neutral oil supports regenerative agriculture to combat climate change and to producing healthy, nutritious food sustainably from seed all the way to can.
- HEILALA VANILLA – Ethically sourced and harvested, produced using environmentally sustainably methods. The vanilla production industry is notorious for corruption, price gauging, product misrepresentation, forest clearing, violence, and mistreatment of workers. This company produces a better product with none of these problems. They are a certified B Corporation.
- BAKER’S IMITATION VANILLA FLAVORING – Use real vanilla in ice cream and McCormick’s Baker’s imitation vanilla flavoring for baking, since the flavor is indistinguishable when high heat is used. Double the usual amount of vanilla called for to improve the flavor. America’s Test Kitchen found that tasters could not tell the difference between vanilla extract and imitation vanilla in a taste test in sugar cookies.

- LOCAL HONEY – Buy from a local beekeeper you know. What you get is real honey — unfiltered, unadulterated, and true to the hive.
- LOCAL PRESERVES – the flavor difference is unmistakable. Small-batch preserves are made with fruit that was grown for taste, not transportation.
