Ingredients for the Best Blueberry Pie Filling Recipe

The key to making the best blue berry pie filling is to use all the best ingredients.

Blueberries – some blueberries that are sold in the grocery store are from varieties bred to produce large berries, or a lot of berries, or berries that can be transported without being damaged. But to make the best tasting pie, you will want berries that are flavorful. When you buy produce at the farmers’ market, a farm market stand, a small specialty shop, or even get it from your own garden, you get produce that is fresh and grown for flavor. That’s where you will find the best tasting produce. Local growers have the advantage of growing varieties for taste rather than for shipping and shelf life, and the difference can be enormous. If you shop at the farmers’ market, you will be getting produce that is fresh, just picked, ripe and in season, and probably organic as well.

Sugar – we use WHOLESOME ORGANIC CANE SUGAR – produced from organic sugar cane fields that are green cut and are not burned or treated with herbicides or synthetic fertilizers. Burning sugar cane fields contributes to air pollution and climate change. It is also a major cause of the destruction of the rain forest. Buying sugar from fields that are green cut helps prevent this destruction. 

Balsamic Vinegar– this is the secret ingredient. It enhances the flavor of the berries. Use a good, imported, aged brand. It might seem expensive, but you don’t need much, so get a good bottle.

Tapioca Flour – most pie filling recipes use flour or cornstarch, which gives the filling a starchy taste, hiding the flavor of the berries. Tapioca flour will jell better and gives a clean taste.

  • Place a medium sized bowl on the scale and measure in the sugar. Add the salt and tapioca flour and stir to mix together.
  • Zero the scale and add the blueberries. Sprinkle the balsamic vinegar over the top and stir all the ingredients together.
  • Allow the mixture to sit for 30 minutes before filling the pie or tart shells.
