We first met pastry chef Chef Justin Lenorovitz, and discovered his business Spontaneous Confections (website) when he started selling French pastries at the Live Oak Farmer’s Market in Santa Cruz, California. Having recently been to Paris, and shopped at many of the bakeries there, we instantly recognized the style and quality of the French pastries he had made. Chef Lenorovitz trained in Bordeaux, France at the prestigious Institut Culinaire de France. In the next few weeks we tried many of his creations and they were stunning – some like works of art. If you are having a dinner party and really want to impress your guests with something special – this is it!

They recently created mini tarts for the Capitola Art and Wine Festival. Hazelnut made with a Pate sablé crust, hazelnut kneffah, salted caramel, hazelnut crémeux and hazelnut praliné. Passionfruit mango with a passionfruit mango pastry cream and compte in a baked meringue ring. Strawberry pistachio with pistashio cream and strawberry coulis.
