The Best Fudge Ever

We recently discovered a new chocolate shop in Santa Cruz – Mutari. They are very careful to source their chocolate from responsible growers. Their growers farm year after year on the same location, not moving into new lands, and they know how to grow and harvest the product to produce the best tasting chocolate. Then Mutari roasts the beans themselves to create the best chocolate possible.

The owner was nice enough to sell us some of the unsweetened chocolate they use to create their products, so we had the finest chocolate we could find for making fudge this year.

tips for making better fudge

  • use the best ingredients – we have listed the brands we used.
  • use a thermometer to make sure the fudge is at ideal temperature
  • use a stand mixer on low to beat the fudge instead of doing it by hand.

We used the Food52 fudge recipe for the instructions, but changed the ingredients to the following:

  • 3/4 cup heavy organic cream (Horizon)
  • 1/4 cup corn syrup
  • 2 cups sugar
  • 3 ounces single source responsibly farmed chocolate (Mutari unsweetened)
  • 2 T organic butter (Horizon)
  • 1 tsp Madagascar bourbon vanilla (Nielsen-Massey organic fair trade)
  • 1 cup fresh walnuts, lightly roasted (Fairhaven Orchards)
  • to taste, sprinkled on top, sea salt crystals (Malden sea salt)
